Field to bottle gin distilled in Mississippi

Wonderbird Spirits is the result of separate but similar stories that converged around one singular goal: to make a world class gin. After two years of developing the distillery and the product, Wonderbird took flight in the Spring of 2019.

To craft our base spirit, we begin by fermenting Mississippi Delta-grown Jasmine rice. Our approach, which borrows from traditional sake making, sets a beautifully clean foundation for layering the subtly complex flavors and aromas of the botanicals. At Wonderbird, we distill each botanical individually to capture their purest essences. We then combine the distillates precisely to produce our signature expressions.

Wonderbird Dry Gin is our take on a classic London dry. Juniper forward, with citrus and savory botanical notes, it is built upon the same Mississippi Delta rice base spirit as our award-winning flagship gin. Designed to be your everyday cocktail workhorse, this is a dry gin that’s ready to take on all the classics and beyond.

Our Gold Medal-winning flagship gin, No. 61, is made with obsessive attention to every detail. A contemporary style gin with wonderful complexity. This gin was designed with martinis in mind but it turns out it is a great sipper as well.  A versatile gin that can make any gin cocktail as well as any vodka cocktail – it just adds something vodka simply can’t.

This seasonally produced gin is the first-ever issuance of our Experimental Gin Series. Using the same Mississippi Delta rice base spirit as our award-winning flagship gin, No. 97 features the delicate essence of locally harvested Southern Magnolia petals (Magnolia Grandiflora). /////////////////////////////////////////////////////////////////////

Nº61 "Cask Finished"

Wonderbird’s latest cask-aged gin.  Rested in a Russel 10 yr bourbon cask for 281 days, this special, limited-release product yielded just 252 bottles. The collector’s item, which shares the same botanical bill as our No. 61 gin, is a wonderfully smooth gin with all the complexity of its predecessor plus vanilla and spice notes brought on by the barrel. A fantastic bourbon replacement for an Old-Fashioned or to sip neat.
